Pumpkin Zucchini Muffins
Pumpkin Zucchini Muffins


Recipe:

-2 Boxes Live GFree yellow cake mix from Aldi

-1 large can pumpkin puree

-2 zucchini-shredded or chopped, whichever you prefer

-1 Bag Enjoy Life chocolate chips

-Approximately 1 cup almond milk


Mix all ingredients together and bake in the oven for 30-35 minutes on 350. This is such an easy thing to toss together that is packed with lots of nutrition. These muffins are a perfect grab on the go snack or easy breakfast to send with the kids to school. This recipe makes about 30. I don't really measure them. I just grab a mixing spoon and scoop some into the muffin tray. Cupcake liners make for an easy cleanup and you only need a mini chopper plus one bowl to mix everything together. I highly recommend a big cupcake pan that can hold 24. You can adjust the cook time depending on how gooey you would like the texture to be. Enjoy!
